It finally feels like summer; hot and humid enough that I have no desire to turn my oven on. A Strawberry Fool (or any other berry, for that matter), is an easy alternative to a baked dessert. I'm giving you a basic recipe for Strawberry Fool, but it is certainly open to imaginative adaption • swap out the strawberries for other berries or stone fruit • whip crème fraîche instead of heavy cream • use sour cream instead of yogurt • add a squeeze of lemon juice • stir in grated orange zest • a splash of Grand Marnier or Crème de Framboise • add some grated chocolate... it's endless... and easy. • adapted recipe | Beth Dooley • 1 pint strawberries • 1tablespoon sugar • 3/4 cup heavy cream • 1/2 teaspoon vanilla • 1/3 cup whole-milk Greek yogurt • Fresh mint sprigs 1. Cut berries into 1/4-inch pieces. Place in a bowl with the sugar and mash with a fork to release juices. 2. Whip the heavy cream to firm peaks in a medium-size bowl; whip in the vanilla and yogurt. Fold mashed berries into the whipped cream. Spoon the mixture into cups or glasses. Garnish with mint. TAKE a LOOK:
