I love steel-cut oats for breakfast. It's something I have always made on the weekends since those days usually allow for more time. But now that my daughter is away at college and my husband is retired, we are not up as early in the mornings and there is no dashing around the house to get out-the-door. It's not until Pipi comes to get me for her walk that I realize I've lounged a good portion of the morning away! So, now we're eating oatmeal on the weekdays. And the way I like to make my steel-cut oats is with the addition of bananas sautéed in a little butter with brown sugar stirred into the mix. It adds a healthy sweetness to the hot cereal. TO MAKE BROWN SUGAR BANANAS: I will use one banana for each serving of oatmeal. In a sautée pan, over medium-low heat, add one tablespoon of butter per banana. When butter begins to brown, add either sliced bananas or, if very ripe (and the sweetest), mashed bananas. Increase the heat a bit and stir the bananas until very hot. Add brown sugar to taste (for me that's about 2 tablespoons for each banana). Continue to stir until sugar is dissolved and caramel-like. Top the oatmeal with a drizzle of cream and the sautéed bananas. TAKE a LOOK:

Eileen, steel cut oats are on the menu this chilly Pacific Northwest morn, and the bananas are ripe and ready to eat. I usually saute apples, but I do believe it's time for me to go bananas! Warm wishes!
