FRIDAY NIGHT DINNER -- Healthy Sloppy Joes

                                        HEALTHY SLOPPY JOES
                                    adapted from Cooking Light Magazine

• 1 teaspoon olive oil
• 2 cups chopped mushrooms
• 1 cup chopped onion
• 1/2 cup chopped green bell pepper
• 1/4 cup chopped celery
• 1/4 cup chopped carrot
• 2 garlic cloves, minced
• 6 ounces ground turkey breast
• 6 ounces ground round
• 1/4 cup ketchup
• 1 tablespoon red wine vinegar
• 1 tablespoon Worcestershire sauce
• 1 teaspoon dried oregano
• 1/4 teaspoon salt
• 1/4 teaspoon pepper
• 1 8-ounce can tomato sauce
• 4 hamburger buns, toasted

1.  Heat oil in a large skillet over medium-high heat.  Add mushrooms and next 7 ingredients; sauté 5 minutes until meat is browned, stirring to crumble.  Stir in ketchup and next 6 ingredients; bring to a boil.  Cover, reduce heat, and simmer 20 minutes, stirring occasionally.  Serve on toasted buns.  Served here with sweet potato fries. 
                                     YIELD:  4 servings

Always looking for a healthier version of my husband's childhood favorites! This is surely going to end up on the menu this weekend!

Eileen,
I'm sending this recipe to my small group at our international church here in Holland. Just last week they did a special potluck dinner and the only other American in the group brought Sloppy Joes. Needless to say everyone found them to be a huge hit! Now they'll be thrilled to know they can make them on their own - healthy style!
