1. Place the peanut butter in a medium metal bowl and set over a pot of boiling water. Stir the peanut butter until it's just barely liquid. (Or place in the microwave for 20-30 seconds). 2. Remove from the heat. Add the turkey and mix well to distribute the peanut butter evenly. 3. Sprinkle the scallions, cilantro, bread crumbs, lemon zest, lemon juice, jalapenos, black pepper and salt evenly over the turkey and mix well. (Try not to over-mix the turkey which can toughen the meat.) 4. Form the mixture into 6 patties and grill. Serve on buns that have been spread with butter and grilled.
