6 medium green peppers 1 1/2 pounds turkey Italian sausage 1/4 cup onion. chopped 2 cups mashed potatoes 1/2 cup roasted red peppers, diced 1 egg, beaten 1/2 teaspoon salt 1/4 teaspoon freshly ground pepper 1/4 cup English cheddar cheese plus additional cheddar for sprinkling
Heat oven to 350 degrees. Remove tops and clean out insides of peppers. Parboil peppers for 5 minutes in boiling, salted water. Brown the sausage and onion in a skillet. Drain off excess fat. Add mashed potatoes, egg, roasted red peppers, salt & pepper and 1/4 cup of the cheese to the sausage and onion mixture. Spoon into peppers that have been placed in a greased casserole dish. Top peppers generously with additional grated cheddar cheese. Bake for 30-40 minutes.
