Barbecued Salmon Smothered with Pineapple Salsa

     During the summer I grill a lot of meat and fish, and serve them with fresh salsas.  Since my tomatoes up until now have been slim-pickings, I made Pineapple Salsa to spoon over pieces of grilled salmon with a dry spice rub.

PINEAPPLE SALSA
• 1 pineapple, flesh cubed into small chunks
• 1 red bell pepper, diced
• red onion, small dice
• jalapeno pepper, small dice
• juice of 1 lime
• pinch of kosher salt
• cilantro, leaves chopped
1.  Combine ingredients.  Amounts of each are up to you.
SALMON SPICE RUB
• 2 tablespoons chili powder
• 1 tablespoon kosher salt
• 1 tablespoon sugar
• 1 tablespoon onion powder
• 1 tablespoon garlic powder
• 1 teaspoon ground cumin
• 1/8 teaspoon cayenne
1.  Mix together spice rub mixture.  Rub into salmon fillet pieces.  (Remaining spice mix can be kept in an airtight jar or zip-lock bag for a later time later use.)  Arrange fish on a plate in one layer and chill fish, covered, for 2 hours. 
2.  Grill salmon and smother in fresh pineapple salsa.  ENJOY
!

I dropped in to see if there was a "Sunday mornings at my house"..... looks like Saturday night's meal was a delight. Beautiful pineapple drawing... yours I assume? You have a flair for life that is a joy to see!

Hi Kate -- Yes, no "Sunday Mornings at My House" today. We were in Iowa for Ragbrai (the bike ride across Iowa) until late yesterday. My husband rode all week. We came home, I made dinner, and we all slept late this morning '-) Too tired for breakfast!

Hi Eileen, great drawing, recipe and pineapple-chopping technique. Talk about proper bite size. Another winner from P-to-P. ;-)
And good for your husband, Ragbrai is something I've heard about for years from Northwest riders. They always talk about the food along the route, pork chop especially.

Hi Eileen! Kevan and I made this for dinner tonight, and it was delicious with a little red quinoa on the side. We're growing herbs on our little German patio, but no cilantro :) So I subbed some basil and mint and it seemed to work alright. Kevan said to be sure to tell you how much he enjoyed the recipe -- he might be your next frequent follower!
