A Classic -- the chocolate chip cookie +

                          I'm sure we all have out favorite.  This one is mine.

              CHOCOLATE CHIP-DRIED CHERRY-PECAN COOKIES

• 1/2 cup granulated sugar
• 1/2 cup brown sugar, packed
• 1/2 cup unsalted butter, softened
• 1 large egg, room temperature
• 1 teaspoon vanilla
• 1 1/2 cups unbleached flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 cup semi-sweet chocolate chips
• 1/2 cup dried sour cherries
• 1/2 cup chopped pecans

1.  Preheat oven to 375˚F.
2.  In a large bowl, combine the granulated and brown sugars and butter.  Mix well.  Add the egg and vanilla and continue to mix until smooth.  In another bowl combine the flour, soda and salt.  Add this to the sugar-butter mixture and mix until it is just combined.  Fold in the chocolate, cherries and pecans.
3.  Drop small mounds of dough onto a parchment-lined baking sheet.  Bake on the oven's middle rack for 10 to 12 minutes.  Transfer to a cooling rack

I am eating one of your scrumptious chocolate chip-cherry-peacan cookies. I made a batch as I had 5 kids coming after school for tea this afternoon. They gobbled them up! Divine cookies. The only change I made was to use whole wheat flour instead of the unbleached flour. They came out just right. Thanks for the great recipe.

Made these just now and they're are great. My house smells like vanilla. I have used coconut oil in place of butter, 1 cup of brown sugar, added some cinnamon into the flour mixture and used only chocolate chips. This recipe is a keeper. Thanks Eileen.

Hi have a question, do I need to put the dough in the fridge for at least one hour? the dough is very soft, and I just made a batch, and they turned into flat cookies, not small and pudgy like yours. what did I do wrong? I do bake-help

I'm sorry you had problems with the cookies. I've never chilled the dough before, but I would certainly try that. Let me know how that works!

Hi Eileen, me Dee again, Lol.....I made the whole batch. the cookies are delish! but I wanted them to look pudgy like yours. I tried dropping them smaller then a kitchen tsp, but they were just small and flat, well there was more to eat that small, lol....I did chill some of the dough, but they still turned out flat. Can you suggest anything to make them puffier? Thanks
will still make them again, very good cookie

Me Dee, Eileen I was reading one of your other cookie recipes, and it asks for baking powder, would these choc. chip cookies that i made, would it be okay to use baking powder? would that puff them up a little? what would you say? let me know

Hi Dee--
I've been thinking about your difficulties with this cookie and I really don't know why this is happening. Is your oven temp calibrated correctly? I will make them again in the next few weeks and will get back to you.

Hi Eileen, Friday I did have my oven calibrated, it seems it was a bit off, so I'm happy it's been taken care of. Well here I go again, I made the cookies again, and still flat. I even printed the recipe in Giant size! incase I had missed something! Lol.... but still flat. of course all gobled up, we really love them. we've decided that's the way they'll be, flat and delish. My husband too funny! he suggested squeezing two cookies together, to make them puffy, NOT.....Lol...........

Dee -- I know I said I'd make these cookies again. I love Costco's dried sour cherries and I am going there tomorrow. So once I have those, I will bake the cookies again and let you know what happens.
